Project Botanicals is a two-week, unique shared dining event using cocktails, artistry and food to create a sensory experience.
Bombay Sapphire’s Ambassador Chase Bickerton and Fine Dining Chef Michael Meredith have come together to create ten cocktails paired to ten dishes, each inspired by one of the ten botanicals found inside the famous blue bottle.

Beautiful botanicals from far‑off lands
The menu at Project Botanicals will pay tribute to each of the hand-selected botanicals found in Bombay Sapphire gin, including juniper berries from Tuscany, coriander seeds from Morocco, liquorice from the grassy plains of China, bitter almonds from Spain and cassia bark from Indo‑China.
Be the first to taste the new Star of Bombay, a super premium gin that highlights two additional botanicals (ambrette seeds from Ecuador and bergamot orange from southern Italy), for a truly complex yet smooth profile.
Tickets. $40 plus booking fee.Includes two cocktails and two paired dishes. Further cocktails and dishes can be purchased at the event for $12 each.

Each ticket is for a set seating session of 2 hours. To enjoy the full experience, please arrive on time. Guests are more than welcome to enjoy cocktails at the bar area before and after their session.
